2. From there select the entire circle and click Object > Create Gradient Mesh set the rows and columns to what is shown in the dialog box below.
3.Using the Direct Selection Tool (A) or the Lasso Tool (Q) select sections of 4-6 anchor points and change their color to something of the same hue as the original circle's color. Do this until your circle is all different colors as shown below.
4. Again using the Direct Selection Tool (A) or the Lasso Tool (Q) select all of the outer anchor points and fill with white.
4. From there use the Selection Tool (V) select whole whole shape.

5. Select the Wrinkle Tool from the left side bar and double click on the icon to change the settings to what is shown below.
6. In circular motions move the Wrinkle Tool over the shape until desired loo is achieved. keep in mind that the more anchor points you use, the slowing illustrator will respond.
7. Once you are done you should have something that looks a little like this:
